Mmmmmm, Pancakes!

For many years I bought pancake mixes. I tried different kinds all of the time, never happy with the flat, flavorless pancakes they all made. A couple of years ago, I had what I call a "duh" moment, when it dawned on me that I should just be making them from scratch instead of wasting money on pancake mixes! (duh). I found this recipe in my Amish cookbook, and it is my favorite. They are easy to mix up, and are very fluffy. If you are in a pancake mix rut like I was, give these a try. Your tummy and your family will thank you and praise you! Maybe not the praise part, but they will be full and happy.
Amish Pancakes
1 C white flour
1 egg
3/4 c buttermilk
2 tbsp vegetable oil
1 tbsp sugar
3 tsp baking powder
1/2 tsp salt
1 tsp vanilla
Mix all ingredients with a fork just until blended. Do not over beat! Fry in a small amount of butter on a griddle over medium heat. The batter will be thick, so spread it out a bit on the skillet. The heat temp. is important on these. These pancakes get big and fluffy, and if the heat is too high, they will be doughy on the inside. Keep the heat at medium and let them cook a bit more slowly so they are done all of the way through. If you are cooking for more than 2 people, I recommend doubling the recipe. I usually do so I have leftovers for the next day! Top your pancakes with butter and maple syrup and wait for the hugs, kisses and overall joy from your family! :)
